This Spicy Garlic Enchilada Soup is super easy to make in one pot, and entirely vegan and gluten free. It’s also protein rich, packed with bold flavors and so delicious.

INGREDIENTS
2 cups enchilada sauce
6 cloves garlic, minced
2 Tbs Enchilada seasoning
3 cups vegetable broth
2 15 oz black beans
1 cup peeled corn
salt, pepper to taste
OPTIONAL ADD ONS:
3/4 cup onions
2 bell peppers
7 oz can jalapenos

INSTRUCTIONS

  • In a pot, heat a bit of oil or vegetable broth for frying without oil. Add garlic, optional onions, and fry them for around 5 minutes.
  • Next add enchilada sauce and seasoning, black beans, corn, vegetable broth and optional jalapeños and bell peppers.
  • Cook for 10 minutes more on medium heat. 5Serve in bowls or on plates.

Leftover turkey soup is hearty, flavorful, and comforting. You can easily throw this homemade turkey soup together within 20 minutes! Adults and kids will devour it and be asking for seconds.

INGREDIENTS
1 tbsp butter
1 tbsp olive oil
½ cup onion chopped
½ cup celery chopped
¼ cup carrot chopped
16 oz cauliflower rice
1 quart chicken or turkey stock
4 cups dark cooked turkey meat shredded
1 tbsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp dried dill
½ cup heavy cream
½ cup crumbled bacon

INSTRUCTIONS

  • Heat the butter and olive oil over medium heat in a large stock pot. Add the onions, celery, and carrots and cook until softened. Add the cauliflower rice, reduce the heat to low, and cover the pot with a lid. Steam the cauliflower for 5 minutes.
  • Add the stock, turkey, and seasonings. Simmer for 5 minutes. Stir in the cream and bacon. Adjust the seasoning if needed.

Convincing my kids to “eat the rainbow” has never been easier thanks to this quick and delicious Taco Soup Recipe! It’s packed with vegetables and a double dose of protein for a dinner that will fill them up and keep them full.

INGREDIENTS
1 tbsp olive oil
1 lb ground beef
1 large sweet onion, diced to 1/2″
2 bell peppers, diced to 1/2″
3 cloves garlic, minced
1 jalapeno, seeded and minced
1 portion homemade taco seasoning, see below
1 28-oz can pureed tomatoes
2 c beef broth
1 14-oz can black beans, drained and rinsed
2 c frozen corn
2 tbsp chopped cilantro
Homemade Taco Seasoning
1-2 tbsp chili powder
1 tbsp cumin
2 tsp paprika
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp garlic powder
1 tsp coriander
pinch oregano
Suggested Toppings for Taco Soup
avocado, to garnish
shredded cheddar or crumbled queso fresco, to garnish
sour cream, to garnish
lime wedges, to garnish

INSTRUCTIONS

  • Make the taco seasoning. Combine all taco seasoning ingredients in a lidded jar, then shake until combined.
  • Heat a dutch oven over medium high heat. Add the olive oil and heat until it shimmers. Add the ground beef and sautee, stirring frequently to break into pieces, until browned and no longer pink, 6-7 minutes
  • Add the onion and bell pepper to the beef and saute until soft, stirring occasionally, 6-7 minutes.
  • Add the garlic, jalapeno, and taco seasoning. Cook, stirring continuously, until the spices are worked into the beef and vegetables and are very fragrant, about a minute.
  • Add the pureed tomatoes, beef broth, black beans, and corn. Increase heat to high and bring to a simmer. Reduce to medium low and simmer 10 minutes.
  • Taste for seasoning and adjust with salt and pepper if needed. Stir in fresh cilantro. Ladle into bowls and serve with desired toppings. Serve immediately.
