Easy Taco Recipe Dinner Board

It’s time to figure out what we’re making for dinner! One of my favorite things to do is look around on Pinterest and see what recipes are out there for me to try, among other things. I’m sure I’m not the only one!

INGREDIENTS
30 taco shells
1 medium sweet onion, chopped
2 Tbsp. olive oil
2 pounds ground turkey
1 packet taco seasoning
Salt and pepper
1 pound Tillamook Mexican 4-Cheese
1 16 oz. pkg. shredded lettuce
6 chopped Roma tomatoes
1 cup salsa
1 cup corn salsa, Trader Joe’s
1 cup sour cream
1 cup guacamole
1 cup Pepita salsa, Trader Joe’s
1 can sliced olives
1 sliced red onion
1 jar LaVictoria Salsa
1 jar Cholula Salsa
Cilantro for garnish
Favorite chips
Habanero pepper, garnish

INSTRUCTIONS

  • On a food-safe large board or tray, place a bowl in the center with shredded lettuce and tomatoes.
  • Fill small bowls with your favorite salsa, guac, olives, and sour cream.
  • Around the outside, leave room for 30 taco shells!
  • To cook the meat, heat the oil in a large frying pan. Add the onion and cook for about 10 minutes, until tender. Add favorite meat and seasoning, cook until meat is browned. Season to taste!
  • Heat oven to 350 degrees. Fill the taco shells with meat and cheese and bake for 5 minutes.
  • Place the cooked tacos around the outside of the board. Fill in open areas with chips and hot sauce!
  • Serve!

Taco Ring

A Taco Ring is a great thing to make for a quick dinner that makes the whole family happy. It’s incredibly easy to make with just three ingredients and everyone can customize theirs with the toppings they like.

INGREDIENTS
1- pound lean ground beef
½ cup onion peeled and diced
½ cup water
1 package 1 ounce taco seasoning
2 cans crescent rolls 8 rolls per can, 16 total rolls
1 cup shredded cheddar or Mexican blend cheese
Topping Options:
guacamole
chopped avocado
chopped tomato
sour cream
shredded lettuce
chopped onion
chopped green onion
lime wedges
salsa
black olives

INSTRUCTIONS

  • Heat a large skillet over medium heat. Crumble the ground beef into the pan and add the diced onions; cook until the beef is no longer pink. Pour the cooked beef into a colander to drain excess grease, then return the meat to the skillet.
  • Add the water and taco seasoning to the cooked meat and cook over low heat for 10 minutes, stirring often.
  • While the meat mixture is simmering, preheat the oven to 375 degrees.
  • Open the cans of crescent roll dough and separate the triangles. Arrange the crescent rolls into a circle by placing on a large baking sheet or pizza pan with the wide end of the dough triangles overlapping and the pointed ends facing out to create the look of a sunburst.
  • Spoon the seasoned ground beef mixture onto the overlapped dough area of the circle. Sprinkle the with shredded cheese.
  • Take the pointed part of the dough and bring it across the meat and cheese filling, then tuck the dough under. Repeat until all of the points of dough have been tucked in and most of the meat is covered by the dough.
  • Bake the taco ring for 18 minutes, until golden brown.
  • Cool slightly, then slice the ring and serve with the toppings of your choice.

Taco Bake (sometimes known as Mexican Pizza) is a simple and quick weeknight meal with layers of tortillas, ground beef and salsa con queso!

INGREDIENTS
1 pound ground beef
1 packet taco seasoning
water as called for on back of seasoning packet
3 (8- inch) flour tortillas
1/2 cup salsa con queso
1 1/2-2 cups shredded Mexican cheese blend

INSTRUCTIONS

  • Brown and crumble ground beef.
  • Drain excess grease.
  • Add in taco seasoning and water (following directions on back of seasoning packet).
  • Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
  • Give it a good stir until thoroughly combined.
  • Preheat oven to 350F degrees.
  • Spray an 8-inch round baking pan with nonstick cooking spray.
  • Layer the bottom of the pan with a flour tortilla.
  • Now add about 1/3 of the ground beef taco filling on the the first layer.
  • Then add 1/3 of the shredded cheese.
  • Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.
  • Bake at 350F degrees for about 15-20 minutes until cheese is melted and edges are slightly golden brown.
  • Allow to cool for a couple of minutes. Slice and serve.

Taco Pockets are a quick fix on a busy weeknight. Cream cheese, salsa, seasoned ground beef and melted cheddar cheese are wrapped up in soft tacos and baked for a delicious and super convenient grab-and-go school lunch or afternoon snack.

INGREDIENTS
1 lb ground beef
1 packet taco seasoning
8 oz cream cheese room temp
1/2 cup salsa
1 cup cheddar cheese shredded
2 tablespoon butter melted
12 small flour tortillas
sour cream salsa, tomatoes, etc. for garnish

INSTRUCTIONS

  • Cook ground beef, crumble and drain.
  • Add packet of taco seasoning and follow instructions on packet to season ground beef.
  • In a medium sized mixing bowl, beat cream cheese until almost fluffy. Slowly add in salsa and blend well.
  • Take a tortilla and spread a spoon full of the salsa mixture in the center. Spoon some ground beef on top of the salsa mixture (enough to cover the salsa). Top with cheese.
  • Fold the tortilla up as you would a burrito. Place on greased cookie sheet.
  • Brush tops of the burritos with melted butter. Bake at 350°F for 15 minutes or until golden brown. Remove from oven and garnish with taco toppings.

INGREDIENTS
1 pound ground turkey or beef
1 (10 ounce) can tomatoes with green chilies
1 cup broth (chicken or beef broth)
1 cup milk
1 (8 ounce) can tomato sauce
1 (1 ounce) package taco seasoning
1 1/2 cup elbow noodles
1 1/2 cup shredded cheddar cheese

INSTRUCTIONS

  • In a large skillet brown the ground turkey or ground beef over medium heat, drain off any grease.
  • Add the undrained can of Ro-Tel, broth, milk, tomato sauce and taco seasoning.
  • Increase heat to medium high until the mixture begins to simmer.
  • Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes.
  • When noodles are tender stir in shredded cheddar cheese.

INGREDIENTS
1 tbsp olive oil
1 lb ground beef
1 large sweet onion, diced to 1/2″
2 bell peppers, diced to 1/2″
3 cloves garlic, minced
1 jalapeno, seeded and minced
1 portion homemade taco seasoning, see below
1 28-oz can pureed tomatoes
2 c beef broth
1 14-oz can black beans, drained and rinsed
2 c frozen corn
2 tbsp chopped cilantro
Homemade Taco Seasoning
1-2 tbsp chili powder
1 tbsp cumin
2 tsp paprika
2 tsp sea or kosher salt
1 tsp cracked black pepper
1 tsp garlic powder
1 tsp coriander
pinch oregano
Suggested Toppings for Taco Soup
avocado, to garnish
shredded cheddar or crumbled queso fresco, to garnish
sour cream, to garnish
lime wedges, to garnish

INSTRUCTIONS

  • Make the taco seasoning. Combine all taco seasoning ingredients in a lidded jar, then shake until combined.
  • Heat a dutch oven over medium high heat. Add the olive oil and heat until it shimmers. Add the ground beef and sautee, stirring frequently to break into pieces, until browned and no longer pink, 6-7 minutes
  • Add the onion and bell pepper to the beef and saute until soft, stirring occasionally, 6-7 minutes.
  • Add the garlic, jalapeno, and taco seasoning. Cook, stirring continuously, until the spices are worked into the beef and vegetables and are very fragrant, about a minute.
  • Add the pureed tomatoes, beef broth, black beans, and corn. Increase heat to high and bring to a simmer. Reduce to medium low and simmer 10 minutes.
  • Taste for seasoning and adjust with salt and pepper if needed. Stir in fresh cilantro. Ladle into bowls and serve with desired toppings. Serve immediately.

INGREDIENTS
4 medium flour tortillas
1 lb cod fillets
2 Tbsp canola oil, for frying
bowl 1-
1/3 cup heavy whipping cream
fish seasoning, bowl 2-
1/4 cup all-purpose flour, measured then sifted
1 tsp ground paprika
¼ tsp ground cumin
2 tsp chili powder
½ tsp garlic powder
½ tsp salt, or to taste
¼ tsp ground black pepper
cabbage slaw-
1 cup green cabbage, finely shredded
1/2 cup red cabbage, finely shredded
1 carrot, julienned
1/2 red onion, sliced
fish taco sauce-
3 Tbsp ranch dressing
3 Tbsp sour cream
1/4 cup mayonnaise
2 Tbsp lime juice
2 tsp sriracha or hot sauce
fish taco toppings-
1/4 cup crumbled feta or cotija cheese
1/3 cup chopped cilantro
1/3 cup tomatoes, cubed
1 lime

INSTRUCTIONS

  • Shred and julienne ingredients for the slaw. Combine and set aside.
  • In a bowl, whisk together the ingredients for the sauce and set aside.
  • Prepare the 2 bowls for the fish breading. Add ingredients from bowl 1 in one bowl and ingredients for bowl 2 in a separate bowl.
  • Dredge the cod fillets into the first bowl, then completely coat in the seasoned flour.
  • Once the oil is hot, add fish fillets and cook 2-4 minutes per side, or until the fillets are flakey and cooked.
  • Meanwhile, warm the tortillas and cut toppings.
  • Add cooked fish to a tortilla. Generously top with slaw, desired topping and drizzle with sauce and fresh lime juice.
  • Enjoy!

INGREDIENTS

2 medium sweet potatoes
1 teaspoon olive oil
1 1/4 teaspoons ground cumin divided
1/4 + 1/8 teaspoon salt
1/4 + 1/8 teaspoon ground pepper
3/4 pound lean (93%) ground turkey
4 garlic cloves minced
1 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 1/4 cup canned crushed tomatoes
1/4 cup grated pepper Jack cheese
2 tablespoons minced flat-leaf parsley

INSTRUCTIONS

  • Pierce the sweet potatoes all over with a fork. Cook in the microwave on HIGH until tender when pierced with a fork, 4 to 5 minutes per side. Let the potatoes rest until cool enough to handle.
  • Cut the potatoes in half lengthwise. Carefully scoop the flesh out of the potatoes and place in a medium-sized bowl. Reserve the skins. With the back of a fork, mash the potato flesh until most lumps are gone. Stir in the olive oil, ½ teaspoon cumin, ¼ teaspoons salt and ¼ teaspoon pepper. Divide the mashed sweet potato evenly between the potato skins. Place on a baking sheet.
  • Heat a large nonstick skillet over medium-high heat. Lightly coat with cooking spray. Add the ground turkey and cook, breaking up with a wooden spoon, until cooked through. Stir in the garlic, chili powder, remaining ¾ teaspoon cumin, oregano, paprika, and remaining ⅛ teaspoon salt and pepper. Cook for 1 minute. Stir in the crushed tomatoes.
  • Preheat the broiler. Spoon the turkey mixture into each sweet potato skin. Top each with 1 tablespoon grated cheese. Broil until the cheese is melted, about 30 seconds. Garnish with parsley. Serve.

INGREDIENTS
2 lbs lean ground beef
2 tsp chili powder
1.5 tsp cumin
2 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne (optional)
2 tbsp minced garlic
1 medium white onion, diced
2 green peppers, diced
2 medium russet potatoes, cut in a small dice (about 2 cups)
3/4 cup salsa
1 (4 oz) can mild green chiles, drained
1 (4 oz) can sliced black olives, drained
1 (14 oz) can diced tomatoes, drained

INSTRUCTIONS

  • Preheat the oven to 350 degrees F.
  • In a large skillet over medium heat, brown the ground beef. While it’s browning, add in minced garlic and white onion and incorporate well with the beef
  • While it’s browning, add the green peppers, potatoes, salsa, green chiles, black olives and diced tomatoes to a large casserole dish
  • Once the beef is mostly browned, transfer it to a strainer and strain out all of the excess grease. Place back into the pan and mix in all of the spices and incorporate well
  • Then, transfer the taco meat and onion mixture into the casserole dish, and use a large spoon to stir in with the other ingredients. Once it’s well combined and evenly distributed, cover with foil or lid, place it in the oven and bake for 45 minutes-1 hour, or until the potatoes are baked all the way through when pierced with a fork
  • Remove from the oven and serve

4 medium green peppers, halved
1.5 lb ground beef, browned
1 packet taco seasoning mix, or seeking good eats homemade taco seasoning recipe
¾ cup water
1-½ cup cheddar cheese
1 cup sour cream

INSTRUCTIONS

  • Preheat oven to 350° F. Wash peppers then slice lengthwise in half through the middle and remove seeds. Place in a casserole dish with ¼ cups water. Cover and microwave 7 to 10 minutes, or until peppers are soft. Check periodically for doneness.
  • In the meantime, brown the ground beef until cooked through. Add the taco seasoning and water and cook according to recipe or packet instructions. After the meat is cooked, mix in sour cream, salsa, and 1 cup of the cheddar cheese.
  • Spray a 13 x 9 baking dish with nonstick spray. Place cooked peppers inside dish and generously stuff with meat and cheese mixture. Top with remaining cheese. Bake 350 ° F for 20-30 minutes until peppers are heated through and cheese is melted. Serve with your favorite taco ingredients and a side of salsa. Enjoy!
